- 250g (8.8 oz) puff pastry
For the filling
- 200g (7 oz) ricotta cheese (or canaan or cottage cheese)
- 100g (3.5 oz) feta cheese
- 100g (3.5 oz) shredded mozzarella (or parmesan or swiss cheese)
- 1 egg
For the egg wash
- 1 beaten egg
For topping (optional)
- sesame seeds
Preheat the oven to 190°C (375°F) on convection mode. In a bowl, crack the egg, beat with a fork, then add the cheeses - mozzarella, ricotta, and feta. Mash together to get a smooth filling.
Roll out the dough on a baking sheet lined with parchment paper, cut into equal squares.
Carefully fill each square, then fold into a triangle, sealing all the edges well.
Brush with beaten egg, optionally sprinkle with sesame seeds, and bake for about 20 minutes or until beautifully golden.
Tips
- If the filling is too soft, add 1 tablespoon of flour or cornstarch.
- Vary the fillings with, for example, a thick béchamel with mushrooms, spinach, or even mashed potatoes with caramelized onions.
