Cheese Borekas

An Israeli classic, borekas are triangular puff pastries filled with a cheese mixture. Enjoy them warm on the go, at a picnic, or with a nice salad.

Ingredients

  • Makes 12 borekas
  • 250g (8.8 oz) puff pastry

For the filling

  • 200g (7 oz) ricotta cheese (or canaan or cottage cheese)
  • 100g (3.5 oz) feta cheese
  • 100g (3.5 oz) shredded mozzarella (or parmesan or swiss cheese)
  • 1 egg

For the egg wash

  • 1 beaten egg

For topping (optional)

  • sesame seeds
  1. Preheat the oven to 190°C (375°F) on convection mode. In a bowl, crack the egg, beat with a fork, then add the cheeses - mozzarella, ricotta, and feta. Mash together to get a smooth filling.

  2. Roll out the dough on a baking sheet lined with parchment paper, cut into equal squares.

  3. Carefully fill each square, then fold into a triangle, sealing all the edges well.

  4. Brush with beaten egg, optionally sprinkle with sesame seeds, and bake for about 20 minutes or until beautifully golden.

Tips

  • If the filling is too soft, add 1 tablespoon of flour or cornstarch.
  • Vary the fillings with, for example, a thick béchamel with mushrooms, spinach, or even mashed potatoes with caramelized onions.
