Cheese Bourekas - Israeli Puff Pastry Triangles

An Israeli classic, bourekas are puff pastry triangles filled with a cheese filling. Eat them warm on the go, at a picnic, or with a big salad on the side.

Ingredients

    Makes 12 bourekas

    • 250 g (9 oz) puff pastry

    For the filling

    • 200 g (¾ cup) ricotta (or cottage cheese, or Israeli Canaan cheese)
    • 100 g (3.5 oz) feta
    • 100 g (1 cup) shredded mozzarella (or Parmesan or Emmental)
    • 1 large egg

    For the egg wash

    • 1 large egg, beaten

    For the topping (optional)

    • sesame seeds
    1. Preheat the oven to 190°C (375°F) on the fan/convection setting. Crack the egg into a bowl, beat it with a fork, then add the cheeses: mozzarella, ricotta and feta. Mash together until you have a smooth, even filling.

    2. Roll out the pastry on a baking sheet lined with parchment paper and cut it into equal squares.

    3. Gently fill each square, then fold it over into a triangle, pressing all the edges together to seal well.

    4. Brush with the beaten egg, sprinkle with sesame seeds if you like, and bake for about 20 minutes, or until nicely golden.

    Tips

    • If the filling is too soft, add 1 Tbsp of flour or cornstarch.
    • Change up the fillings: try a thick mushroom or spinach béchamel, or mashed potatoes with caramelized onions.
