Chocolate Peanut Butter Cookies

An iconic snack-time treat, cookies aren’t always easy to make. Here’s a tested and approved recipe for chocolate chip and peanut butter cookies, plus some tips to help you succeed.

Chocolate Peanut Butter Cookies

Ingredients

  • Makes about 25 cookies
  • 200g (1⅔ cups) all-purpose flour, sifted
  • 110g (½ cup) brown sugar (or unrefined sugar)
  • 1 tbsp honey
  • ¼ tsp salt
  • 1 large egg, lightly beaten
  • ½ tsp baking soda
  • 80g (⅓ cup) peanut butter
  • 100ml (scant ½ cup) sunflower oil
  • 150g (1 cup) chocolate chips

Making the Cookies

  1. In a large bowl, mix the oil, sugar, salt, honey, and peanut butter, then add the egg, and finally fold in the flour, baking soda, and chocolate chips. Transfer to a sheet of parchment paper and shape into a long log. Wrap tightly in the parchment paper and freeze for 40 minutes.

  2. Once time is up, preheat the oven to 170°C (340°F). Slice the log into rounds about 1cm (½ inch) thick and arrange on a baking sheet, spacing them well apart. Bake in the center of the oven for 10-12 minutes.

Tips

  • Double the recipe and freeze your second log to easily pull out another time.
