For 4 servings
- 4 homemade hamburger buns
- 4 beef patties (150g/5oz each)
- 4 green lettuce leaves, shredded (iceberg or butter lettuce)
- 2 tomatoes, thinly sliced
- Pickle slices (optional)
- 1 red onion, thinly sliced (optional)
- 1 jar of caramelized onions with yellow or red onions
For the hamburger sauce
- 2 tbsp finely minced pickles (or relish)
- 1 tsp vinegar (cider or white wine) (skip if using relish)
- 2 tbsp ketchup
- 1 heaping tbsp mustard
- 5 tbsp mayonnaise
- 1 tbsp onion powder (or fried onions ground to powder)
- 1 tsp garlic powder
- 1 level tsp paprika
If you want to make your hamburger buns from scratch, I recommend my homemade hamburger bun recipe - dairy-free, wonderfully soft, and they freeze perfectly. Ideal if you want to prepare ahead for next time.
Preparing the toppings
- Slice the tomatoes into thin rounds, cut the lettuce leaves into strips. In a small bowl, mix the sauce ingredients: finely minced pickles with vinegar (or relish), mayonnaise, ketchup, mustard, paprika, onion powder, and garlic powder.

Cut the hamburger buns in half, place them cut-side up on a baking sheet and warm at 200°C (400°F) for 8 minutes.
Cooking the patties
- Shape patties about 1cm (½ inch) wider than the buns as they shrink during cooking. In a very hot skillet, sear your patties for 4 minutes on each side (if you have a meat thermometer, they’re done when the center reaches 54°C/130°F).
Assembling the hamburger
- For each hamburger, spread sauce on the bottom bun, layer with a lettuce leaf, two tomato slices, 2-3 red onion slices, then place the patty and top with caramelized onions, 3-4 pickle slices, and cover with the top bun that you’ve lightly spread with sauce.
Serve hot with French fries or sweet potato fries.
Tips
- If you already have your hamburger buns ready (homemade or store-bought), this recipe takes only 10 to 15 minutes to make.
- Pickles are optional if you’re already adding them to the sauce.
