- 4 leaves green lettuce, shredded (iceberg or butter lettuce)
- 2 tomatoes, cut into thin slices
- Sliced pickles (optional)
- 1 red onion, thinly sliced (optional)

For the burger sauce
- 2 Tbsp finely chopped pickles (or relish)
- 1 tsp vinegar (cider or white wine) (not needed if using relish)
- 2 Tbsp ketchup
- 1 heaping Tbsp mustard
- 5 Tbsp mayonnaise
- 1 Tbsp onion powder (or fried onions crushed to a powder)
- 1 tsp garlic powder
- 1 level tsp paprika
If you’d like to make your own hamburger buns, I recommend my recipe for homemade hamburger buns, which are dairy-free. They’re wonderfully soft and freeze perfectly, ideal if you want to get ahead for next time.
Preparing the toppings
- Cut the tomatoes into thin slices and the lettuce leaves into strips. In a small bowl, mix the sauce ingredients: the finely chopped pickles with the vinegar (or the relish), the mayonnaise, ketchup, mustard, paprika, onion powder and garlic powder.

Cut the hamburger buns in half, place them cut side up on a baking sheet and warm them at 200°C (400°F) for 8 minutes.
Cooking the patties
- Shape the patties 1 cm (½ inch) wider than the buns, since they shrink as they cook. In a very hot skillet, sear the patties for 4 minutes on each side (if you have a meat thermometer, they’re ready when the center reaches 54°C / 130°F).
Assembling the hamburger
- For each hamburger, spread the bottom bun with sauce, add a lettuce leaf, two tomato slices and 2-3 rings of red onion, then set the patty on top and cover it with caramelized onions and 3-4 pickle slices. Finish with the top bun, lightly spread with sauce.
Serve piping hot, with potato fries or sweet potato fries.
Tips
- If you already have your hamburger buns ready (homemade or store-bought), this recipe takes only 10 to 15 minutes to make.
- The pickles are optional if you’re already putting some in the sauce.
