Club Sandwich - Triple-Decker Sandwiches for a Crowd

These triangle sandwiches, made with two layers of sliced bread, are what we call a club. They are easy to make and always make a nice impression on the table.

Ingredients

  • Makes 22 club sandwiches
  • 33 slices sandwich bread (2 loaves)
  • mayonnaise
  • 1 Tbsp mustard
  • 1 head lettuce
  • 5-6 tomatoes
  • 500 g (1.1 lb) cooked chicken (or canned tuna in water)

These club sandwiches are excellent and ideal for appetizers, a picnic, a buffet or any good excuse to serve a complete cold meal. They are also perfect for using up leftover chicken!

Preparing the filling

  1. Start by chopping the chicken (or flaking the tuna), slice the tomatoes into thin rounds and shred the lettuce. Put the ingredients in three separate bowls.

  2. Make a mayonnaise or use a jar of store-bought mayonnaise, put some in a small bowl and stir in the mustard.

Assembling the sandwiches

  1. Lay three slices of bread in front of you and spread a thin layer of mayonnaise on each slice. Put some chicken on the first slice, then tomato and lettuce. Close with the second slice, mayonnaise side facing the salad. Repeat with more chicken, tomato and lettuce. Close with the third slice, mayonnaise side against the filling.

  2. Hold the bread firmly and cut in half diagonally with a knife. Secure with a toothpick and arrange on a serving platter.

Tips and variations

  • You can replace the chicken with canned tuna in water, salmon, deli meat, or even surimi or sliced hard-boiled eggs.
