    For 22 club sandwiches

    • 33 slices white bread (2 packages)
    • mayonnaise
    • 1 tbsp mustard
    • 1 head lettuce
    • 5-6 tomatoes
    • 500g (1 lb) chicken (or canned tuna in water)

These club sandwiches are excellent and ideal for appetizers, picnics, buffet dinners, or any good excuse to have a complete cold meal. They’re also perfect for using up leftover chicken!

    Preparing the Filling

    1. Start by chopping the chicken (or flaking the tuna), cutting the tomatoes into thin slices, and the lettuce into strips. Place the ingredients in three separate containers.

    2. Make mayonnaise or use store-bought mayo, put some in a small bowl and add the mustard.

    Assembling the Sandwiches

    1. Place three slices of white bread in front of you, spread a thin layer of mayonnaise on each slice. Place chicken on the first slice, then tomato and lettuce. Close with the second slice, mayo side facing the salad. Repeat the process by adding chicken, tomato, and lettuce. Close with the third slice, mayo side against the filling.

    2. Hold the bread firmly and cut diagonally in half with a knife. Insert a toothpick to hold it together and place on a serving platter.

    Tips and Variations

    • You can replace the chicken with canned tuna in water, salmon, deli meat, or even surimi or sliced hard-boiled eggs.
