    Serves 4

    • 2 shallots
    • 2 tablespoons semi-dry white wine
    • 250ml (1 cup) heavy cream
    • Salt, pepper
    1. In a skillet, melt the butter and add the finely minced shallot. Once the shallot has softened, add your choice of fish, season with salt and pepper, and deglaze with the white wine.
    2. Pour in the cream and continue cooking until it thickens slightly and the fish is perfectly cooked.
    3. Serve with white rice, quinoa, or steamed potatoes.

    For this recipe, you can use cod, Nile perch, (kosher substitutes for) scallops, shrimp
