Serves 4
- 2 shallots
- 2 tablespoons semi-dry white wine
- 250ml (1 cup) heavy cream
- Salt, pepper
- In a skillet, melt the butter and add the finely minced shallot. Once the shallot has softened, add your choice of fish, season with salt and pepper, and deglaze with the white wine.
- Pour in the cream and continue cooking until it thickens slightly and the fish is perfectly cooked.
- Serve with white rice, quinoa, or steamed potatoes.
