For about 10 croquettes
- 600g (1.3 lbs) chicken breast, coarsely ground (not pureed)
- 1 small or medium red onion, chopped
- 4 garlic cloves, minced, or garlic paste
- 1 large egg
- 1 tablespoon chopped cilantro
- 1 tablespoon chopped parsley
- 1 teaspoon paprika
- Breadcrumbs
- Sunflower oil (for frying)
- Salt, pepper
- In a large bowl, combine the ground chicken, salt, pepper, paprika, parsley, cilantro, red onion, and egg. Mix well. The mixture should be pliable without being completely liquid. If too wet, add a bit of breadcrumbs (or matzo meal).
- Place breadcrumbs in a shallow plate. Scoop a tablespoon of the mixture, gently shape into a patty, and coat both sides with breadcrumbs.
- Heat a large skillet with oil. Once at the right temperature, add the patties. Ideally, cook 5 at a time to prevent the oil from cooling too much. Cook about 4 minutes per side until golden brown.
- Serve hot with a lemon wedge!
Tips and Time Management For appetizers, you can make them mini-sized.
For busy evenings, you can double the recipe and freeze the patties. Just pop them in a preheated 170°C (340°F) oven for about 10 minutes.
