    Makes 30 olive bites

    • 60 g (¼ cup) milk
    • 60 g (¼ cup) neutral oil
    • 200 g (2 cups) shredded cheese (Emmental, mozzarella or Emek)
    • 150 g (1¼ cups) sifted all-purpose flour (plain flour)
    • 1/2 tsp salt
    • 30 pitted green olives
    • 1 large egg (for the egg wash)
    • Sesame seeds (optional)

Instructions for the crispy olive bites

    1. Mix the milk, oil, cheese, salt and flour until you have a soft dough.

    2. Preheat the oven to 180°C (350°F). Take a small piece of dough, tuck an olive in the center and seal it carefully to form a ball.

    3. Roll in the beaten egg, then in sesame seeds if you like. Arrange on a baking sheet lined with parchment paper and bake at 180°C (350°F) for 25–30 minutes, until golden.

    Variations

    • Roll the balls in za’atar, skipping the egg wash.
    • Swap the olive for a cube of feta or a small piece of roasted bell pepper.
    • Replace the milk with 100 g (⅓ cup + 1 Tbsp) sour cream and use 40 g (3 Tbsp) oil instead of 60 g.
