For 30 olive bites
- 60g milk (¼ cup)
- 60g neutral oil (¼ cup)
- 200g shredded cheese (7 oz - emmental, mozzarella, or emek)
- 150g all-purpose flour, sifted (1¼ cups)
- ½ tsp salt
- 30 pitted green olives
- 1 egg (for egg wash)
- Sesame seeds (optional)
Preparing the crispy olive bites
Mix the milk, oil, cheese, salt, and flour until you get a soft dough.
Preheat the oven to 180°C (350°F). Take a small piece of dough, place an olive in the center, and carefully seal it to form a ball.
Roll in the beaten egg, then in sesame seeds if desired. Place on a baking sheet lined with parchment paper and bake at 180°C (350°F) for 25–30 minutes, until golden.
Variations
- Roll the balls in zaatar without dipping in egg.
- Replace the olive with a cube of feta or a small piece of roasted bell pepper.
- Substitute the milk with 100g sour cream (שמנת חמוצה) and use 40g oil instead of 60g.
