Ingredients

    For 30 olive bites

    • 60g milk (¼ cup)
    • 60g neutral oil (¼ cup)
    • 200g shredded cheese (7 oz - emmental, mozzarella, or emek)
    • 150g all-purpose flour, sifted (1¼ cups)
    • ½ tsp salt
    • 30 pitted green olives
    • 1 egg (for egg wash)
    • Sesame seeds (optional)

    Preparing the crispy olive bites

    1. Mix the milk, oil, cheese, salt, and flour until you get a soft dough.

    2. Preheat the oven to 180°C (350°F). Take a small piece of dough, place an olive in the center, and carefully seal it to form a ball.

    3. Roll in the beaten egg, then in sesame seeds if desired. Place on a baking sheet lined with parchment paper and bake at 180°C (350°F) for 25–30 minutes, until golden.

    Variations

    • Roll the balls in zaatar without dipping in egg.
    • Replace the olive with a cube of feta or a small piece of roasted bell pepper.
    • Substitute the milk with 100g sour cream (שמנת חמוצה) and use 40g oil instead of 60g.
