- 150g flour (5.3 oz, a bit more depending on cottage cheese texture)
- 500g cottage cheese (17.6 oz)
- 4 eggs
- 2-3 tablespoons sugar
- 1 pinch baking powder
- a few drops vanilla extract
- 1 tablespoon butter or neutral oil (sunflower)
- In a mixing bowl, combine the cottage cheese, eggs, vanilla extract, sugar, baking powder, and then the flour, mixing well.
- In a non-stick pan over medium-high heat, add a little oil or butter and pour small amounts of batter to make the pancakes. They’re very airy, so you need to wait until the bottom is set before flipping them, or you’ll have trouble turning them over.
Serve with a little powdered sugar, fresh fruit, or maple syrup.
