French-Style Peas (Petits Pois à la Française) with Spring Onions and Lettuce

French-style peas have gone a little out of fashion, and yet they’re a simple, delicious way to cook peas. You can add cubes of cured meat, but today I’m giving you a vegetarian version.

Ingredients

    Serves 6

    • 3 spring onions (white bulb onions), thinly sliced
    • 800 g (1.75 lb) frozen or fresh peas (petite peas if possible)
    • 1 heart of lettuce, cut into strips
    • vegetable stock
    • 2 Tbsp olive oil (or butter)
    • 1 pinch chopped fresh mint (optional)
    1. If using fresh peas, start by shelling them (the weight given in the ingredients is after shelling). Thinly slice the spring onions.
    2. Pour the olive oil into a Dutch oven, sauté the onions, then add the peas and the lettuce, and pour in enough vegetable stock to just cover. Cover and cook for 25 minutes, until tender. Sprinkle with mint if using.

Serve alongside a roast chicken, stuffed artichokes or with rice.
