Fritèches - Sfériès (Kosher Passover Fritters)

As Passover approaches, I’m sharing again this traditional Passover week treat. Fritèches (or Sfériès) are light, melt-in-your-mouth sweet fritters. An express recipe with just 2 ingredients!

Fritèches - Sfériès (Kosher Passover Fritters)

Ingredients

  • Makes 25 pieces
  • 5 eggs
  • 5 tbsp fine matzo meal (unleavened bread flour) - essential for a smooth texture without grainy bits
  • neutral oil (sunflower), for frying
  1. Mix the eggs with the flour, beating with a mixer. When the batter has gained volume and is smooth and creamy, take a tablespoon of this batter and slide it into a pot of hot oil.
  2. Drain on paper towels or a strainer placed over a plate, then choose between 2 options: sprinkle with sugar or dip in honey syrup.
  3. To make the honey syrup: in a saucepan, combine 5 tbsp honey + 5 tbsp sugar + 5 tbsp water. Bring to a boil, then quickly dip the fritters in before placing on a serving plate.
