Fritèches (Sfériès) - Passover Matzo Meal Fritters in Honey Syrup

With Passover just around the corner, I’m sharing this traditional treat of Passover week again: fritèches (or sfériès) are little fritters that are incredibly light and melt in your mouth, then get their sweetness from a coating of honey syrup. An express recipe with just 2 ingredients!

Fritèches (Sfériès) - Passover Matzo Meal Fritters in Honey Syrup

Ingredients

    Makes 25

    • 5 large eggs
    • 5 Tbsp fine matzo meal (matzo cake meal) - essential for a smooth texture with no little grains
    • neutral oil (sunflower), for frying

    For the honey syrup

    • 5 Tbsp honey
    • 5 Tbsp sugar
    • 5 Tbsp water
    1. Beat the eggs with the matzo meal using an electric mixer. Once the batter has gained volume and is smooth and creamy, take a tablespoon of batter and slide it into a saucepan of hot oil.
    2. Drain on paper towels or in a colander set over a plate, then choose one of 2 options: sprinkle them with sugar or dip them in honey syrup.
    3. To make the honey syrup: in a saucepan, combine 5 Tbsp honey + 5 Tbsp sugar + 5 Tbsp water. Bring to a boil, then quickly dip the fritters in it before arranging them on a serving plate.
    4. Ready? Enjoy!
