- 10 rice paper wrappers
- 400g (14 oz) colorful fruits of choice strawberries, melon, raspberries…
- 1/2 bunch fresh basil or fresh mint
- zest of one lemon (preferably lime)
- 125g (1/2 cup) mascarpone
- 100g (1/3 cup) coconut cream
- 25g (2 tbsp) granulated sugar
- To serve
- chocolate sauce or fruit coulis
- Wash the fruits and cut into slices then into sticks. Finely chop the herbs (basil or mint).
- In a bowl, mix the zest, mascarpone, and powdered sugar. Keep refrigerated.
- Dip the rice paper wrappers one at a time in warm water, place on a cutting board. Spread mascarpone cream in a horizontal line leaving 1cm (1/2 inch) empty toward the edge (don’t put too much or you’ll have trouble closing it), add the fruits, chopped herbs, fold in the sides and roll while removing all the air.

Serve with a fruit coulis, caramel sauce or chocolate sauce.
Tips and variations
For a lighter fruit-only version, you can omit the mascarpone and coconut cream. If you want to make these rolls a bit ahead of time, I recommend wrapping them individually in plastic wrap until serving time, so they won’t dry out.
