Fruit Sushi Rice Bowl (Sweet Chirashi)

A fun, sweet take on the classic chirashi rice bowl, to adapt with whatever fruit is in season.

Fruit Sushi Rice Bowl (Sweet Chirashi)

Ingredients

Check off ingredients as you go

    Makes 1 large bowl

    • 150 g (¾ cup) good-quality sushi rice
    • 1 glass (200 ml / ¾ cup + 1 Tbsp) coconut cream
    • something to season your sushi rice (lemon zest, vanilla…)
    • A mix of colorful fresh fruit (strawberries, raspberries, bananas, kiwis, mangoes…)
    • 1/2 bunch basil and mint, finely chopped
    • A fruit coulis or a chocolate sauce
    1. Start by cooking the rice as for the fruit sushi.
    2. Cut up the fresh fruit and finely chop the herbs.
    3. Put the rice in a bowl, add the fresh fruit and chopped herbs, and pour over the coulis just before serving.

    Tips

    Don’t skimp on the quality of the sushi rice: it really makes all the difference in how the rice looks and holds together. Poor-quality rice turns gummy and is pretty unpleasant to eat.

    If you’re making the sushi and maki rolls and have some of the coconut cream and mascarpone mixture left over, add a spoonful next to the fruit. It’s delicious.
