Ingredients

    For 1 large bowl

    • 150g (¾ cup) quality sushi rice
    • 1 glass coconut cream
    • Seasonings for your sushi rice (lemon zest, vanilla…)
    • A mix of colorful fresh fruits (strawberries, raspberries, bananas, kiwis, mangoes…)
    • ½ bunch fresh basil and mint, chopped
    • Fruit coulis or chocolate sauce

    A sweet and creative version of the classic Japanese rice tartare, this dessert bowl combines perfectly seasoned sushi rice with fresh seasonal fruits, aromatic herbs, and a drizzle of fruit coulis or chocolate sauce.

    1. Start by cooking the rice as you would for fruit sushi
    2. Cut the fresh fruits and chop the herbs.
    3. In a bowl, place the rice, add the fresh fruits and chopped herbs, and drizzle with coulis just before serving.

    Tips

    Don’t skimp on the quality of sushi rice as it will really make a difference in both appearance and texture. Poor quality rice becomes mushy and quite unpleasant to eat.

    If you’re also making the sushi and maki and have leftover coconut cream mascarpone mixture, you can add a quenelle next to the fruits - it’s delicious.
