- Makes 15 pieces
- 3 eggs
- 250g (2½ cups) almond flour
- 1 tbsp orange juice
- 100-150g (½-¾ cup) granulated sugar (or KLP powdered sugar)
- 3 drops bitter almond extract
- ½ capful orange blossom water
- Sliced almonds (optional, for decoration)
These almond petit fours are melt-in-your-mouth, gluten-free and flourless, making them perfect for Passover.
- Preheat oven to 180°C (350°F) convection. Mix the eggs, almond extract, orange blossom water, and orange juice, then add the dry ingredients to obtain a smooth batter.
- Place paper liners on a baking sheet. Drop a spoonful of batter into each liner, sprinkle with sliced almonds for decoration.
3. Bake in the middle of the oven for 12-15 minutes at 180°C (350°F) (watch carefully, they bake quickly!). Let cool then store in an airtight container to keep them moist.

Tips and Variations
Let the batter rest for about 30 minutes at room temperature before spooning into the liners. This will allow the flavors to develop better and make the batter slightly less sticky (as the almond flour continues to absorb moisture).
Guizadas bake very quickly and will firm up as they cool, so it’s important to watch that they remain lightly golden or they will be harder and therefore really less good.
They keep very well for several days in an airtight container.
