  • 100-150g (½-¾ cup) granulated sugar (or KLP powdered sugar)
  • 3 drops bitter almond extract
  • ½ capful orange blossom water
  • Sliced almonds (optional, for decoration)

These almond petit fours are melt-in-your-mouth, gluten-free and flourless, making them perfect for Passover.

  1. Preheat oven to 180°C (350°F) convection. Mix the eggs, almond extract, orange blossom water, and orange juice, then add the dry ingredients to obtain a smooth batter.

Tips and Variations

  • Let the batter rest for about 30 minutes at room temperature before spooning into the liners. This will allow the flavors to develop better and make the batter slightly less sticky (as the almond flour continues to absorb moisture).

  • Guizadas bake very quickly and will firm up as they cool, so it’s important to watch that they remain lightly golden or they will be harder and therefore really less good.

  • They keep very well for several days in an airtight container.
