- 150g (5oz) date paste (or 7 large pitted Medjool dates)
- 1 handful almonds
- 1 handful hazelnuts
- 2 handfuls walnuts
- 1/2 tsp ground cinnamon
- 2-3 tbsp grape juice
Put the nuts in a food processor first and pulse to get a sandy texture, then add the dates and cinnamon. Process again until you get a homogeneous mixture, then pour in the grape juice. Process one last time to adjust the consistency - it should be malleable without being soft. Shape into balls or place in a container. You’ll add wine or grape juice during the Seder to reach the desired consistency.
Variation
- Add an apple or pear to the mix.
