Homemade Haroset - Five Versions

The mortar of the Passover Seder plate (and once mortar for the stomach), I’m sharing 5 excellent versions of this Seder element that you can make in no time!

Homemade Haroset - Five Versions

Ingredients

Check off ingredients as you go

    For version 1

    • 2 apples (Gala type)
    • 1 pear
    • 4 dates
    • 4 prunes
    • 50g almonds (1/2 cup, unsalted)
    • 30g pistachios (or blanched hazelnuts, unsalted)
    • 3 cloves (if you like)
    • 1/2 teaspoon ground cinnamon
    • 100ml sweet wine or grape juice (scant 1/2 cup)

    For version 2

    • 40g blanched almonds (1/3 cup)
    • 6 pitted dates
    • 1 matzo
    • 120ml sweet wine or grape juice (1/2 cup)

    For version 3

    • 3 apples (Gala type)
    • 1 teaspoon brown sugar
    • 80 to 100g finely chopped walnuts (3/4 to 1 cup)
    • 3 teaspoons honey
    • 100 to 120ml wine (sweet or grape juice, scant 1/2 cup)
    • 1/2 teaspoon cinnamon

    For version 4

    • 4 Granny Smith apples
    • Juice of 2 lemons
    • 100g chopped walnuts (1 cup)
    • 150g golden raisins (1 cup)
    • 110g honey (1/3 cup)
    • 4 tablespoons sweet wine

    For version 5 Alsatian-style

    • 60g almond flour (1/2 cup)
    • 60g hazelnut flour (1/2 cup)
    • 2-3 apples
    • Zest and juice of one lemon
    • Grape juice

    Haroset: Version 1

    Peel and core the apples and pear, then quickly blend or grate. Do the same with the dates and prunes.

    Put all ingredients except the spices and sugar in a saucepan, and cook over low heat for about fifteen minutes. Add the spices and cook for another 5 minutes. Pour in the grape juice until you reach the desired consistency.

    Haroset Version 2 - No-Cook

    Roughly chop the almonds, dates and matzo, then mix with the sugar and wine (or grape juice), adding the liquid little by little until you achieve the desired consistency. Set aside in a pretty ramekin and optionally sprinkle with cinnamon.

    Haroset Version 3 - No-Cook

    Mix the sugar and cinnamon.

    Peel and core the apples, cut them finely or grate them. Add the cinnamon-sugar mixture, then the honey and wine, stirring until everything is well combined. Store in a ramekin in the refrigerator until ready to serve.

    Haroset Version 4 - No-Cook

    Grate the apples, add the lemon juice, walnuts, raisins, then the honey and wine. Keep refrigerated.

    Haroset Version 5 - No-Cook - Alsatian Style

    Grate the apples, add the almond and hazelnut flour, the zest then the lemon juice. Pour in the grape juice to achieve the desired consistency.

    Tips and Time Management

    Add the wine gradually as you’ll need more or less depending on the size of the apples to get the right consistency.

    If using organic fruit, no need to peel.

    Taste and adjust quantities to your liking.
