Israeli Schnitzel - Crispy Sesame-Breaded Chicken Cutlets

Schnitzel is more or less Israel’s national dish, right up there with hummus and falafel. Beautifully crispy chicken cutlets, first marinated and then breaded. A great way to cook your chicken cutlets.

Israeli Schnitzel - Crispy Sesame-Breaded Chicken Cutlets

Ingredients

Check off ingredients as you go

  • 500 g (1.1 lb) chicken cutlets

For the marinade

  • 2 large eggs, beaten
  • 1 Tbsp mustard, leveled
  • 1 tsp sweet paprika
  • 1 tsp garlic powder
  • Salt, pepper

For the breading

  • breadcrumbs
  • 2 Tbsp white sesame seeds (optional)

For frying

  • neutral oil
  1. In a shallow dish, beat the eggs, then add the marinade spices (mustard, paprika, garlic, salt, pepper). Place the chicken cutlets in this mixture and let them marinate in the refrigerator for at least 30 minutes.
  2. Coat in a mixture of breadcrumbs + sesame seeds (if using).
  3. Fry in neutral oil (no need for a deep bath of oil) until both sides are golden, or bake the schnitzels on a baking sheet lined with parchment paper and sprayed with oil for 15 minutes (turning halfway through) at 220°C (425°F), then 7 minutes under the broiler (grill) to brown (keep an eye on them, it can go fast!).

Serve right away, with mashed potatoes, fries or roasted vegetables.

Tips

  • You can make your schnitzels ahead and reheat them in the oven or the air fryer before serving.
  • They also freeze well.
