Ingredients

    Serves 4

    • 2 kohlrabi, peeled
    • 2 (red) apples, peeled and cored

    For the dressing

    • 2 generous handfuls fresh cilantro (coriander), roughly chopped + a little extra to garnish
    • 1 clove garlic, finely chopped
    • 3 Tbsp red wine vinegar or apple cider vinegar
    • 4 Tbsp olive oil
    • a little beet juice (from your vacuum-packed cooked beets, for example)
    • Salt, pepper
    1. Cut the apples and kohlrabi in half, then slice thinly (ideally with the slicing blade of a food processor) so everything is the same size.

    2. In a salad bowl, combine the dressing ingredients, mix, then add the apples and kohlrabi. Toss well and arrange on a serving plate with a little cilantro.

Variation: you can swap the kohlrabi for turnip, and the red apple for a green one, for more tartness.
