Serves 4
- 2 kohlrabi (colorabi), peeled
- 2 red apples, peeled and cored
For the dressing
- 2 generous handfuls fresh cilantro, roughly chopped + extra for garnish
- 1 garlic clove, finely minced
- 3 tablespoons red wine vinegar or apple cider vinegar
- 4 tablespoons olive oil
- a splash of beet juice (from your vacuum-packed beets, for example)
- Salt, pepper
Halve the apples and kohlrabi, then slice thinly (preferably using a mandoline or food processor slicing attachment) to get uniform pieces.
In a large bowl, combine the dressing ingredients and whisk together. Add the apples and kohlrabi, toss well to coat, and transfer to a serving plate. Garnish with extra cilantro.
Variation: You can substitute turnips for the kohlrabi, and use green apples instead of red for more tartness.
