Kohlrabi Apple Salad

Ingredients

    Serves 4

    • 2 kohlrabi (colorabi), peeled
    • 2 red apples, peeled and cored

    For the dressing

    • 2 generous handfuls fresh cilantro, roughly chopped + extra for garnish
    • 1 garlic clove, finely minced
    • 3 tablespoons red wine vinegar or apple cider vinegar
    • 4 tablespoons olive oil
    • a splash of beet juice (from your vacuum-packed beets, for example)
    • Salt, pepper
    1. Halve the apples and kohlrabi, then slice thinly (preferably using a mandoline or food processor slicing attachment) to get uniform pieces.

    2. In a large bowl, combine the dressing ingredients and whisk together. Add the apples and kohlrabi, toss well to coat, and transfer to a serving plate. Garnish with extra cilantro.

      Variation: You can substitute turnips for the kohlrabi, and use green apples instead of red for more tartness.
