    Makes 2 loaf cakes

    • 4 large eggs
    • 185 g (1½ cups) powdered sugar (icing sugar)
    • 2 packets (15 g) vanilla sugar (or 2 tsp vanilla extract)
    • 80 g (⅓ cup) neutral oil
    • 140 ml (½ cup + 1½ Tbsp) orange juice
    • 250 g (2 cups) sifted all-purpose flour (plain flour)
    • 2 level tsp baking powder
    • a few sliced almonds (flaked almonds)
    • 100 ml (⅓ cup + 1 Tbsp) maple syrup
    1. In a large bowl, add in this order the eggs, the sugar and the vanilla sugar, and mix well until smooth. Then add the oil, the orange juice and finally the flour and baking powder. Mix again (without beating). Pour into two loaf pans.

    2. Bake on the middle rack at 160°C (325°F) for 30 minutes (check for doneness by inserting a toothpick or the tip of a knife, which should come out clean).

    3. As soon as the cakes come out of the oven, drizzle the maple syrup over both of them and brush it over the entire top with a pastry brush. Sprinkle with sliced almonds or other nuts (walnuts, pecans, hazelnuts…).

    Variations

    • You can replace the maple syrup with honey, warmed slightly so it’s runny.
