Montecaos or Ghriba

Montecaos are small, crumbly shortbread cookies flavored with cinnamon or topped with an almond. They have the advantage of being egg-free and dairy-free, and are delicious with mint tea.

Ingredients

    For about 20 cookies

    • 90g (¾ cup) powdered sugar
    • 150ml (⅔ cup) neutral oil
    • 100g (1 cup) chickpea flour
    • 250g (2 cups) all-purpose flour
    • ½ packet baking powder (optional)
    • ½ tsp cinnamon

    Preparing the Montecaos

    1. Preheat the oven to 160°C (320°F) convection.

    2. In a bowl, mix the oil and sugar, then add the chickpea flour, all-purpose flour, and baking powder. Incorporate using a spatula or wooden spoon. The dough should not stick to your fingers.

    3. Form small balls and flatten them slightly. Place on a baking sheet lined with parchment paper and bake for 15 minutes in the middle of the oven. They should crack slightly.

    Tips and Time Management

    • These cookies freeze very well. You can add a whole almond for decoration before baking.
