    Serves 4 (as a starter)

    • 3 large eggs
    • 250 g (1 cup) fromage blanc (or plain Greek yogurt)
    • 250 g (9 oz) button mushrooms (fresh, or about one can)
    • 2 Tbsp all-purpose flour (plain flour)
    • 1 tsp baking powder
    • Nutmeg
    • Salt, pepper
    1. Preheat the oven to 180°C (350°F).
    2. In a large bowl, crack the eggs, season with salt, pepper and nutmeg, beat lightly, then add the flour, baking powder, fromage blanc and finally the mushrooms. The mixture should be supple, neither too runny nor too thick.
    3. Pour into individual molds and bake for 25 minutes.

Time-saving tip For a variation, you can use artichokes or cauliflower, for example.
