- 2 medium eggplants
- 1 level tablespoon garlic powder
- 1 level tablespoon ground cumin
- 1/2 teaspoon salt
- 3 tablespoons neutral oil (sunflower)
- In a large bowl, combine all the seasoning ingredients. Peel and cut the eggplants into cubes and add them to the bowl, mixing well to coat the eggplant pieces.
- Preheat the oven to 190°C (375°F). Arrange the eggplant on a baking sheet lined with parchment paper and bake for about 35 minutes. Stir halfway through cooking. If they seem to be drying out during cooking, add a drizzle of oil and mix well.
Serve with your kémias or with pita, tahini sauce, and homemade falafels.
