Oven-Roasted Onions - Caramelized with Just 2 Ingredients

Onions caramelized in the oven, with only 2 ingredients and no effort at all. Perfect alongside meat or in a quiche. Vegan, parve and kosher for Passover.

    Serves 6

    • 4 red and/or yellow onions
    • a drizzle of olive oil
    1. Preheat the oven to 180°C (350°F). Drizzle a little olive oil over a baking sheet.
    2. Trim both ends of the onions, then cut them in half, removing the outer layer, which is usually a bit gritty.

    1. Place the onions on the baking sheet, cut side down, and roast for about 35-40 minutes, or until the onions are tender and golden. Small ones take less time than big ones, so keep an eye on them until they reach the texture you like; red onions generally caramelize faster.

    These onions are delicious eaten with still-warm pita and hummus!
