Cookies are the classic after-school treat, yet they aren’t always easy to get right. Here is a tried-and-tested recipe for chocolate chip and peanut butter cookies, along with a few tips for nailing them every time.

Ingredients

  • Makes about 25 cookies
  • 200 g (1⅔ cups) all-purpose flour (plain flour), sifted
  • 110 g (½ cup + 1 Tbsp) light brown sugar (or unrefined sugar)
  • 1 Tbsp honey
  • 1/4 tsp salt
  • 1 large egg, lightly beaten
  • 1/2 tsp baking soda
  • 80 g (⅓ cup) peanut butter
  • 100 ml (⅓ cup + 1 Tbsp) sunflower oil
  • 150 g (¾ cup) chocolate chips

Making the cookies

  1. In a large bowl, mix the oil, sugar, salt, honey and peanut butter, then the egg, and finally the flour, baking soda and chocolate chips. Turn the dough out onto a sheet of parchment paper and shape it into a long log. Wrap the parchment around the log and put the dough in the freezer for 40 minutes.

  2. When the time is up, preheat the oven to 170°C (340°F). Cut the log into slices about 1 cm (½ inch) thick and arrange them on a baking sheet, leaving plenty of space between them. Bake in the middle of the oven for 10-12 minutes.

Tips

  • Double the recipe and freeze the second log so you can pull it out easily next time.
