Pickled Cucumbers (Marinated)

Here’s a quick cucumber salad you can serve as is or as a condiment with salmon, deli meats, or a green salad.

Pickled Cucumbers (Marinated)

Ingredients

Check off ingredients as you go

  • 2 medium cucumbers, sliced into thin rounds

For the brine

  • 3 tbsp apple cider vinegar
  • 4 tbsp water
  • 1/2 tsp fine salt
  • a pinch of black pepper
  • 2 to 3 tbsp chopped dill and/or chives
  • 2 small white onions, thinly sliced (optional)
  1. In a container, combine all the brine ingredients and mix well.
  2. Slice the cucumbers into thin rounds and add to the brine. The cucumbers should be covered with liquid.
  3. Let marinate for several hours.

These cucumbers will keep for several days in a tightly sealed container.

Tips and Variations

  • The amount of liquid will vary depending on the size of your cucumbers. Simply multiply the proportions so the liquid covers the cucumbers.
  • For a Polish version, you can also add sour cream
  • For an Austrian version, add sugar to the brine (1 tsp).
