- 2 medium cucumbers, sliced into thin rounds
For the brine
- 3 tbsp apple cider vinegar
- 4 tbsp water
- 1/2 tsp fine salt
- a pinch of black pepper
- 2 to 3 tbsp chopped dill and/or chives
- 2 small white onions, thinly sliced (optional)
- In a container, combine all the brine ingredients and mix well.
- Slice the cucumbers into thin rounds and add to the brine. The cucumbers should be covered with liquid.
- Let marinate for several hours.
These cucumbers will keep for several days in a tightly sealed container.
Tips and Variations
- The amount of liquid will vary depending on the size of your cucumbers. Simply multiply the proportions so the liquid covers the cucumbers.
- For a Polish version, you can also add sour cream
- For an Austrian version, add sugar to the brine (1 tsp).
