Quick Pickled Cucumbers (Ashkenazi cucumber salad)

Ingredients

Check off ingredients as you go

  • 2 medium cucumbers, cut into fairly thin rounds

For the brine

  • 3 Tbsp apple cider vinegar
  • 4 Tbsp water
  • 1/2 tsp fine salt
  • 1 pinch black pepper
  • 2-3 Tbsp chopped fresh dill and/or chives
  • 2 small white onions, thinly sliced (optional)
  1. In a bowl, combine all the brine ingredients and mix well.
  2. Cut the cucumbers into thin rounds and add them to the brine. The cucumbers should be covered at least to the top.
  3. Let marinate for several hours.

These cucumbers will keep for several days in a tightly closed container.

Tips and variations

  • The amount of liquid will vary depending on the size of your cucumbers; just multiply the proportions so the liquid covers the cucumbers to the top.
  • For a Polish version, you can also add some sour cream
  • For an Austrian version, add sugar to the brine (1 tsp).
