The most famous Indian sauce, very healthy and quick, made with yogurt, cucumber, and mint. It pairs perfectly with Indian dishes like red lentil fritters.

Ingredients

    For 1 large bowl

    • 3 Greek yogurts (or fromage blanc)
    • 1 Israeli cucumber (1/2 if regular cucumber)
    • 1 small garlic clove, minced or 1/2 tsp garlic powder
    • 1 small bunch fresh mint
    • Salt

    This little Raita sauce traditionally accompanies Indian dishes, especially spicy ones, as the mild flavor of yogurt balances the heat. It’s very similar to Greek Tzatziki, which is traditionally seasoned with lemon.

    1. Peel the cucumber, remove the garlic germ, and quickly blend with the mint.

    2. In a large bowl, whisk the yogurt well until smooth and creamy, add salt. Add the cucumber, mint, and garlic. Keep refrigerated.

    Serve with Massala vadai (Indian falafels!)

    Variations

    There’s a variation of this sauce where you add a diced tomato or blend it with the cucumber, along with 1/2 tsp cumin seeds.
