A quick and delicious recipe for oven-roasted carrots that will have you buying carrots just so you can make it.

Roasted Carrots with Balsamic, Garlic and Fresh Herbs

Ingredients

Check off ingredients as you go

  • 10 carrots (about)
  • 3 Tbsp olive oil
  • 2 Tbsp balsamic glaze
  • 4 cloves garlic, minced
  • 3 Tbsp fresh herbs (thyme, rosemary, chives…)
  • Salt, pepper
  1. Peel the carrots and cut them in half lengthwise (unless they are already thin), then arrange them in a baking dish.

Preheat the oven to 190°C (375°F) fan/convection.

  1. In a bowl, mix the olive oil and balsamic glaze, season with salt and pepper, then add the herbs and minced garlic. Pour over the carrots and toss to coat them in the mixture.

  1. Bake in the middle of the oven for 45 minutes, or until the carrots are tender (check with the tip of a knife).
