Roasted Zucchini with Herbs

An excellent side dish that will make most zucchini skeptics fall in love with them. Perfect with fish.

Roasted Zucchini with Herbs

Ingredients

Check off ingredients as you go

  • about 10 small zucchini
  • 3 tablespoons olive oil
  • 2 tablespoons garlic powder
  • 2 tablespoons fresh or dried herbs (thyme, rosemary, herbes de Provence…)
  • Salt, pepper
  1. Wash the zucchini and cut them lengthwise (in 2 or 3 pieces depending on their size). Arrange on a baking sheet lined with parchment paper. Season with salt and pepper, add the garlic and herbs, then brush with olive oil or drizzle over each zucchini slice.
  2. Bake in the middle of the preheated oven at 200°C (400°F) (convection + broil) for about 30 minutes or until nicely golden and tender (a knife tip slides in very easily).

I love making these zucchini as a side for oven-roasted sea bream or roasted sea bass.
