- Makes 1 large bowl
- 3 garlic cloves, crushed
- 1/2 tsp paprika
- 1 pinch of saffron (optional)
- 1 level tbsp mustard
- 2 egg yolks (extra fresh)
- 150ml (2/3 cup) neutral oil (I like a 4-oil blend)
- 150ml (2/3 cup) olive oil
- Salt
Place two egg yolks in the bowl of a food processor along with the mustard, salt, and crushed garlic. Start whisking, then pour in the oil in a thin stream, giving it time to incorporate each time. Once thickened, add the paprika and saffron.
Serve on toasted bread with a good fish soup.
