Rouille Sauce

This rouille sauce is the perfect accompaniment to your fish soup. The secret to success, just like with mayonnaise, is ensuring all ingredients are at the same temperature.

Ingredients

  • Makes 1 large bowl
  • 3 garlic cloves, crushed
  • 1/2 tsp paprika
  • 1 pinch of saffron (optional)
  • 1 level tbsp mustard
  • 2 egg yolks (extra fresh)
  • 150ml (2/3 cup) neutral oil (I like a 4-oil blend)
  • 150ml (2/3 cup) olive oil
  • Salt

Place two egg yolks in the bowl of a food processor along with the mustard, salt, and crushed garlic. Start whisking, then pour in the oil in a thin stream, giving it time to incorporate each time. Once thickened, add the paprika and saffron.

Serve on toasted bread with a good fish soup.
