Schnitzel - Crispy Breaded Chicken Cutlets

Schnitzel is practically Israel’s national dish alongside hummus and falafel. Beautiful crispy chicken cutlets, first marinated then breaded. An excellent way to prepare your chicken cutlets.

Ingredients

  • 500g (1 lb) chicken cutlets

For the marinade

  • 2 beaten eggs
  • 1 level tablespoon mustard
  • 1 teaspoon paprika (sweet)
  • 1 teaspoon garlic powder
  • Salt, pepper

For the breading

  • breadcrumbs
  • 2 tablespoons white sesame seeds (optional)

For frying

  • neutral oil
  1. In a shallow dish, beat the eggs into an omelet, add the marinade spices (mustard, paprika, garlic, salt, pepper). Place the chicken cutlets in this mixture and let marinate for at least 30 minutes in the refrigerator.
  2. Coat in a mixture of breadcrumbs + sesame seeds (if using)
  3. Fry in neutral oil (no need for deep oil) until both sides are golden, or bake the schnitzels on a baking sheet lined with parchment paper and sprayed with oil for 15 minutes (flipping halfway) at 220°C (425°F), then 7 minutes on broil to brown (watch carefully, it can go fast!).

Serve immediately with mashed potatoes, fries, or roasted vegetables.

Tips

  • You can prepare your schnitzels ahead of time and reheat them in the oven or air fryer before serving.
  • They can also be frozen.
