Fish Meat Sauces & condiments

Tartar Sauce - Homemade with Cornichons, Capers and Fresh Herbs

Tartar sauce is the perfect partner for fish, cold meats like roast beef or grilled meats, or a delicious fish burger. The secret to getting it right, just like mayonnaise or rouille sauce, is to have all the ingredients at the same temperature.

    Serves 4 (one large bowl)

    • 2 egg yolks (very fresh)
    • 1 level Tbsp mustard
    • 200 ml (¾ cup + 1 Tbsp) neutral oil
    • 100 ml (⅓ cup + 1 Tbsp) olive oil
    • 1 shallot, finely chopped
    • 2 Tbsp chopped cornichons (gherkins)
    • 1 tsp chopped capers
    • 1/2 tsp garlic powder
    • 1 Tbsp snipped chives
    • 1 tsp chopped parsley
    • a squeeze of lemon juice (or sherry vinegar)
    • Salt, pepper
    1. In the bowl of a food processor, put the two egg yolks, the mustard and the salt. Start whisking, then add the oil in a thin stream, giving it time to incorporate each time before adding more.

    2. Once it has thickened to the consistency you want, transfer to a serving bowl and add the rest of the ingredients (pepper, shallot, cornichons, capers, garlic, chives, parsley and lemon juice). Keep in the fridge until ready to serve.

    Variations

    • Some people add 1 Tbsp chopped white onion and 1 tsp tarragon.
