Carrot and Red Lentil Soup - Creamy, Spiced and Vegan
Who said you can’t make a delicious meal from pantry staples? This recipe was such a hit at home that I had to share it. As for the ginger, here’s my no-waste tip: I always buy a nice big root, peel it, cut it into 1-2 cm pieces and freeze them in a bag, spacing the pieces well apart, so I always have some on hand.

Tom Kha Gai - Thai Coconut Chicken Soup
Tom kha gai is a wonderfully flavorful, exotic soup made with chicken, spices and coconut milk that I make every year when winter comes. It’s mild and spicy at the same time, a real treat. I discovered it years ago at Izaaki, a restaurant that no longer exists but that I loved. It’s the kind of soup you’d go out to a restaurant for, except now you can make it at home!

Green Pea, Broccoli and Zucchini Soup - Velvety and Potato-Free
A pretty green vegetable soup, with no potatoes. A vitamin-packed bowl that’s rich in fiber. The secret to a really velvety texture is not to add too much of the cooking liquid, so you get a soup that’s flavorful and smooth.

Miso Soup (Miso Shiru) - Easy Vegan Version with Tofu and Wakame
A staple of Japanese starters, miso soup is a light, soothing and comforting soup made with miso paste, seaweed and tofu. Here is a deliciously fragrant vegan version, made without dashi.

Kubbeh Hamusta - Iraqi Sweet and Sour Kubbeh Soup
Nothing like a tangy broth to whet the appetite! That’s why I want you to discover an Iraqi dish with delicate, fragrant flavors: kubbeh. They simmer in a lemony broth unlike anything you’ve tasted before.

Fish Soup with Rouille - Made from Heads and Bones
Here is a flavorful, simple way to make homemade fish soup, served with rouille sauce. If you’re not in the habit of asking your fishmonger to set aside the heads and bones for you, it’s time to start! Top this soup with the fish of your choice, steamed and added just before serving.

Butternut Squash and Red Lentil Soup - Easy, Warming and Vegan
Who said soups were boring? Here’s an easy butternut squash soup. It’s comforting, filling and packed with vitamins, perfect for fall and winter. Vegan and parve when made with vegetable stock.

Hot and Sour Soup (Potage Pékinois) - Chinese Soup with Chicken, Black Mushrooms and Bamboo Shoots
Hot and sour soup, which we call potage pékinois (“Peking soup”) in France, is one of the most popular Chinese soups in Chinese restaurants, along with wonton soup. It’s a thick, exotic broth that warms you up on cold evenings and can make a full meal on its own. I also like to serve it as a starter for a Chinese dinner, with spring rolls on the side and chicken with black mushrooms and bamboo shoots.

Brighton Soup - Creamy Carrot and Cheddar Soup
As soon as the weather starts to turn cooler, I always put a good soup on the menu at least once a week. Some people tend to find soups boring, but for us it’s just the opposite: we have a lot of fun here making them with every possible vegetable and cheese. Served with a few croutons, slices of toast, focaccia… A complete meal that the whole family loves. So here is a new soup to add to your list, Brighton soup. It’s a delicious soup with an English accent, made slightly creamy by the cheddar, which pairs beautifully with the sweetness of the carrots. A dairy, kosher recipe.

Nikitouche - Tunisian Chicken Soup with Tiny Round Pasta
How can I sum up a dish that’s at once so simple and so delicious? Nikitouche is my childhood: a lovely golden chicken broth dotted with tiny round pasta, the famous nikitouches.

Krupnik - Polish Pearl Barley Soup
Here’s a rustic, traditional soup that’s part of our winter menus and also of our Tu BiShvat menu, when it’s customary to eat barley. Pearl barley soup, Krupnik, is a Polish Ashkenazi specialty that warms both body and heart. It’s a lovely way to cook pearl barley, if you have some sitting in your pantry without knowing what to do with it. You can make it with or without meat; both options are given in the recipe.

Vegetarian Kreplach Soup (Krepler) - Mushroom and Potato Dumplings in Vegetable Broth
Kreplach (or krepler, as we call them at home) are Ashkenazi filled dumplings, German in origin, that come in both cheese and meat versions. The best-known kreplach are usually filled with chicken or beef and served in chicken soup, but today I’m sharing a vegetarian (parve) version that’s every bit as tasty!

Mushroom and Chestnut Soup (Velouté de Champignons)
A classic of French cooking as soon as fall arrives, this comforting mushroom and chestnut soup is the one to make when the temperatures start to drop.
